Classic Cream of Tomato Soup

This classic soup was inspired by the Heinz version, which I enjoyed as a child. Sadly it contains milk.

2 tins chopped tomatoe, 1 garlic clove (chopped), 1 onion (chopped), 1 tbsp sugar, 1 vegetable stock cube, 100ml boiling water, 200ml soya milk, 100ml soya cream

Saute the onions and garlic in oil. Add the tomatoes. Add the boiled water to the stock cube and mix. Add to tomato mixture. Add sugar. Bring to the boil and simmer with a lid on for 20 minutes. Remove from the heat and add the milk and cream (soya products are low in fat and tend to curdle when added to hot liquid). Blend with a hand blender until smooth. Return to the heat before serving. Ladle into a bowl and drizzle cream in the centre.

Serve with warm ciabatta.
