Spicy Bean Burger

This recipe is dedicated to my friend Rachel, who recently decided to try out being a vegan 🙂 It is really quick and easy to make and perfect for trying out new protein sources. It tastes great too!

Bean burger: 200g kidney beans; 150g black beans; 1 small shallot; jalepenos to taste; 1 carrot (grated); 1/2 cup rolled oats; 1/4 cup sunflower seeds; salt and pepper to taste; 1/2 tsp each of cayenne pepper, cumin, coriander; flour to coat; oil for frying

Toppings: iceberg lettuce, vegan cheese, fried onions

Sauce: homemade mayonnaise or tomato chilli jam

Blend the oats and seeds until fine. Drain and rinse the beans. In a mixing bowl mash the beans with a fork (this requires a bit of elbow grease!) Finely chop the shallot and chilli/jalepenos. Add all the ingredients together in a large mixing bowl.  Mix together well and form burger patties. Lightly coat them in flour to create a crispy finish and fry them on a medium heat for a few minutes either side.

Serve in a fresh ciabatta bun with the toppings of your choice.

Makes about 6 patties.
