Tomato and Ginger Chilli Jam

This is my most beautiful from-scratch creation. I looked in the fridge and the cupboards and experimented. Granted the idea is not mine, and quicker fast-fixes can be found in the supermarket…but nothing beats a home recipe.

100g cherry tomatoes (quartered); 1/2 cup passata; half an onion; 1 garlic clove; 1 thumb of ginger; 1/2 large chilli; salt and pepper; 1 tbsp brown sugar; 1/4 cup water

Finely chop the ginger, garlic, chilli and onion. Add everything together in a bowl and mix well. Transfer to a baking tray and bake for about 20mins at 180°C. Transfer back to the bowl and leave to cool. The brown sugar will allow the jam to bind into a yummy gloppy sauce.

Perfect for splodging on a spicy bean burger!
