Garlic Mayonaise (for those who enjoy a potent breath!)

Quick mayo fix that will keep in the fridge for a couple of days! Follow this recipe to get a fluffy mayo that wobbles like the egg stuff.

4 tbsp soya milk

1/2 tsp mustard powder (or dijon mustard, depending on what you have)

3 tbsp lemon juice

1/2 garlic clove (for super garlic breath…half if you can’t handle it!)

125ml vegetable or sunflower oil

salt and pepper to taste

pinch of cayenne pepper

Combine all the ingredients in a blender except the oil. Blend a little. Add the oil a little bit at a time and really slowly. If you have a blender with a small pouring hole at the top that would be ideal!

It’s really important to add the oil slowly because if you add it all at once it just curdles.
